Homemade Chicken Tikka Masala — Healthier Than Takeout

Chicken tikka masala is one of the world's most beloved dishes, but the traditional restaurant version is a calorie bomb. This healthier homemade version keeps all the deep, aromatic flavor while cutting the fat significantly — delivering 40g of protein at just 520 calories.

The Greek yogurt marinade does double duty: it tenderizes the chicken with its natural acidity while adding tangy depth that cream alone can't achieve. Combined with a tomato-based sauce enriched with just enough cream to be indulgent, you get a tikka masala that's rich, comforting, and genuinely good for you.

This recipe makes excellent leftovers — the flavors deepen overnight as the spices meld into the sauce. Make a batch on Sunday and enjoy restaurant-quality Indian food for lunches all week.

Frequently Asked Questions

Is homemade tikka masala healthier than restaurant?

Significantly. Restaurant versions often use 200-300ml of cream plus butter, bringing a serving to 700-900 calories. This version uses Greek yogurt marinade and just 80ml of cream total, cutting calories nearly in half while keeping the rich, creamy taste.

Can I make it dairy-free?

Use coconut yogurt for the marinade and coconut cream instead of heavy cream. The flavor profile shifts slightly toward Thai curry, which is equally delicious.

How spicy is this recipe?

Mildly spiced as written. For more heat, add 1-2 minced green chilies or ½ tsp cayenne pepper with the spices. Garam masala is warm and aromatic, not hot.

Can I freeze chicken tikka masala?

It freezes beautifully for up to 3 months — curries are one of the best freezer meals. Cool completely, store in airtight containers, and reheat on the stovetop over medium-low heat. The flavors actually deepen after freezing and reheating.

Does marinating time really matter?

Yes. The yogurt marinade tenderizes the chicken and allows the spices to penetrate deeper. Thirty minutes is the minimum, but overnight gives the best results — the chicken becomes noticeably more tender and flavorful.
