- 400 g Boneless chicken thighs
- 120 g dry Quinoa
- 1 medium cubed Sweet potato
- 2 cups Mixed greens
- 1 tbsp Olive oil
- 1 tbsp Soy sauce
- 2 cloves minced Garlic
- 1 tsp Paprika

Marinate the chicken
Combine 1 tbsp soy sauce, 2 minced garlic cloves, 1 tsp paprika, and a drizzle of olive oil. Coat 400g boneless chicken thighs and marinate for at least 15 minutes (up to overnight for maximum flavor).
